Easy Pasta


Ingredients:
  1. 200 grams noodles, Fettuccine shape (cooked)
  2. 1/4 cup fat-free ricotta cheese or 1/4 cup paneer
  3. 2 tbsp low-fat cream cheese
  4. 2 tsp grated parmesan cheese
  5. 1 tsp minced garlic
  6. 1/8 tsp salt (or more to taste) or 1/8 tsp garlic salt (or more to taste)
  7. 1/4 tsp pepper (or more to taste)

Method:
  1. Combine ricotta, cream cheese, half and half, margarine, parmesan, salt and pepper and mix slightly.
  2. Over medium heat, add the garlic and sauté for 2 to 3 minutes, until it becomes fragrant.
  3. Add the tofu noodles and heat through, stirring. Add pre-cooked veggie here, if desired, and heat through.
  4. Reduce heat to low-medium. Make a reservoir in the center of the pan with the noodles surrounding. Add the sauce mixture and let it soften. Mix it up and stir it into the noodles.
  5. Heat through and serve

Veg Alfredo Cheese Pasta


Servings for 4
Ingredients

  1. Onion- 1 cup chopped
  2. Carrot- 3/4 cup chopped
  3. Capsicum- 1/2 cup chopped
  4. Spinach wash and chopped- 1 cup
  5. Garlic cloves- 4-5 chopped
  6. 1 Green chilli- chopped
  7. Parmesan Cheese- 200 grams grated
  8. Milk- 1 cup
  9. Mixed herbs- 1 tsp
  10. Black pepper powder- 1/4 tsp
  11. Salt 
  12. Oil- 3 tbsp
  13. Pasta- 3 cups


Method 

  1. In a bowl add pasta, water, 1 tbsp of oil and 1/2 tsp of salt and keep it a medium flame with lid covered for 15 minutes, after 15 minutes check there is no grain when we try to break it
  2. Now sieve it and wash with cold water and keep it aside 
  3. Now in fry pan, add oil on medium flame , as the oil heats up, add garlic, chilli, and saute it for 2 minutes then add chopped onions, carrots and spinach and mix it for 5 minutes on medium flame.
  4. As the colour of onion changes, add capsicum and saute it for 2 minutes.
  5. Now add half of grated parmesan cheese, half milk to the mixture and turn the flame to slow 
  6. As the cheese starts to melt, add mixed herbs, black pepper and 1/2 tsp of salt and mix well
  7. Now add boiled pasta to the mixture and mix well then add the remaining grated cheese and milk to the mixture and mix it again.
  8. cook it for 2 more minutes and turn off the flame, here the alfredo cheese pasta is ready.
