Ingredients
- Onion- 1 cup chopped
- Carrot- 3/4 cup chopped
- Capsicum- 1/2 cup chopped
- Spinach wash and chopped- 1 cup
- Garlic cloves- 4-5 chopped
- 1 Green chilli- chopped
- Parmesan Cheese- 200 grams grated
- Milk- 1 cup
- Mixed herbs- 1 tsp
- Black pepper powder- 1/4 tsp
- Salt
- Oil- 3 tbsp
- Pasta- 3 cups
Method
- In a bowl add pasta, water, 1 tbsp of oil and 1/2 tsp of salt and keep it a medium flame with lid covered for 15 minutes, after 15 minutes check there is no grain when we try to break it
- Now sieve it and wash with cold water and keep it aside
- Now in fry pan, add oil on medium flame , as the oil heats up, add garlic, chilli, and saute it for 2 minutes then add chopped onions, carrots and spinach and mix it for 5 minutes on medium flame.
- As the colour of onion changes, add capsicum and saute it for 2 minutes.
- Now add half of grated parmesan cheese, half milk to the mixture and turn the flame to slow
- As the cheese starts to melt, add mixed herbs, black pepper and 1/2 tsp of salt and mix well
- Now add boiled pasta to the mixture and mix well then add the remaining grated cheese and milk to the mixture and mix it again.
- cook it for 2 more minutes and turn off the flame, here the alfredo cheese pasta is ready.
